Roasted red pepper brie sauce
You can make this in to soup or you can pair it with Curried Pumpkin seed crusted Halibut!
½ c sliced shallots
3 cloves garlic, sliced
10 black pepper corns
2 red peppers, roasted and peeled
1 ½ c. white wine
4 c heavy cream
½ c soft brie cheese
- Heat medium pot and coat with canola oil.
- Sauté shallots, garlic, and peppercorns until translucent, add roasted red peppers.
- Deglaze with white wine.
- Add heavy cream and simmer for 20 minutes.
- Add brie cheese and blend till smooth.
- Season with salt and pepper.
