Roasted red pepper brie sauce

You can make this in to soup or you can pair it with Curried Pumpkin seed crusted Halibut!

½ c sliced shallots
3 cloves garlic, sliced
10 black pepper corns
2 red peppers, roasted and peeled
1 ½ c. white wine
4 c heavy cream
½ c soft brie cheese

  1. Heat medium pot and coat with canola oil.
  2. Sauté shallots, garlic, and peppercorns until translucent, add roasted red peppers.
  3. Deglaze with white wine.
  4. Add heavy cream and simmer for 20 minutes.
  5. Add brie cheese and blend till smooth.
  6. Season with salt and pepper.
