Roasted Corn Soup
With the rainy weather we are having today, and the anticipation of the corn patch growing, this is nice soup that you can serve with a lot of things.
1/2 cup yellow onion
4 cups roasted corn
5 cloves garlic
1 cup white wine
4 cups chicken stock
2 cups heavy cream
10 basil leaves sliced
Salt and pepper
- Roast corn in oven or on the grill, cut off the kernels.
- Sauté onions and garlic until translucent, add corn.
- Deglaze with white wine, add chicken stock and cream.
- Simmer on stove for 3o min, add basil season with salt and pepper.
- Blend until smooth.
I have served this soup with crab or grilled chicken on top, either one is great!

Basil Tomato Soup
On a chilly day It always nice to make soup! Here is one of my favorites
Basil tomato soup
2 qt chopped tomato
2 c diced yellow onion
3 tb sliced garlic
½ cup tomato paste
6 basil leaves
2 tb canola oil
1 c white wine
1 qt heavy whipping cream
2 qt water
salt and pepper
Method: In a large pot place 2 tb canola oil, put over high heat. Once the pan is hot, put in onions and garlic. Sauté for about 5 minuets. Add chopped tomatoes and cook for another 5 minuets. Add tomato paste and stir until mixed in. Deglaze with the white wine making sure to scrape all the chunks from the bottom of the pan. Add water and cream then bring to a boil. Once boiling add basil leaves and reduce to a simmer. Simmer for 30 minuets then blend till smooth. Season with salt and pepper.
